The Sustainable Land Lab Competition in St. Louis delivered a remarkable concept from the depths of what was once thought to be an empty and worthless lot: The Bistro Box! Local architects and chefs joined forces to create this unique café built out of old shipping containers, with talented guest chefs at the helm. This competition showcased how seemingly forgotten vacant land can become something truly extraordinary when given the opportunity.
Bistro Box was one of the lucky four to be chosen out of an impressive 48 submissions made in the Sustainable Land Lab competition, sponsored by Washington University and the city of St. Louis. Winners have been rewarded with an invaluable $5,000 seed money grant as well as a two-year land lease agreement making their dream projects come true. To make it even better, Bistro Box will be sharing its lot with Our Farm, another successful contestant offering sustainable agriculture networks.
With a vision of sustainability and self-sufficiency, the Smitheys constructed their three-bedroom, two-and-a-half-bath abode in 2016 out of eight recycled shipping containers that had previously journeyed around the world twelve times. After scrutinizing them carefully at their destination in St. Louis, these metal boxes initially used to transport goods (including tires) were reworked into an impressive 3,000-square-foot house adorned with two stories.
The Smitheys were not only drawn to the concept of recycling conex boxes but also saw it as an opportunity to express their individual flair. Nevertheless, in order to remain within the budget they had no choice but to do much of the work themselves. It’s important that people understand that although shipping container houses may offer a more affordable option than traditional builds, costly components such as kitchens and bathrooms still need installation. The outcome is astonishing with its charming upcycled details the house looks amazing!

Establishing a cafe can be quite a challenge. It takes time to investigate and find an ideal spot, huge expenditures on renovations and equipment at the outset, plus expert know-how in operating. Even with all that effort invested though, success is never guaranteed; locations may not have enough foot traffic or arguably high rent costs which could make attracting customers difficult. Despite this precariousness, however, those who do choose to take the plunge into café ownership are often rewarded for their risk!
Jason Deem, the investor of Cherokee Street and owner of a shipping container cafe at 2622 Cherokee Street (at Texas Avenue), is bringing back a beloved classic. The Empire Cafe pays homage to its predecessor – the old Empire Sandwich Shop that once stood in this exact location before it was demolished in 2006.
Empire Cafe is a novel concept for St. Louis but has become popular in Europe and some coastal cities in the United States. It has been designed to emphasize sustainability, seasonal availability of local ingredients from purveyors, as well as health consciousness while also offering our community an exciting rotating menu of international street food!
